Coconut Oatmeal Chocolate Chip Cookies

South Water Caye, pronounced Key, is a nice barrier island off the coast of Belize. During a trip to Belize, we stayed on South Water Caye for a few days. Where we stayed had a mound of coconuts next to the grater/shredder. You could eat as much coconut as you want. This cookie came about because of our friend, Ann, and her love for coconut.
